Easy Italian Meal Ideas

Here’s the plan

Turkey meatballs with a light tomato and basil sauce.

We try to keep it healthy, but sometimes there’s a need for more red sauce Italian. In our family that’s normally Friday pizza night, but these are two really (really) delicious alternatives.

Turkey Meatballs

We eat these turkey meatballs from Inspired Taste at least twice a month. The best thing about them is that they are both light and hearty, probably because the sauce is just crushed / diced tomatoes, basil leaves and olive oil and the turkey in the meatballs is just a nice everyday alternative to beef.

One of us is putting the little angel to bed while the other mixes the turkey, egg, etc. and using the ice cream scoop to create the meatballs.

We actually serve ours plain or with Parmesan, but adding your favorite pasta or zucchini noodles would make it a fuller meal.

Chicken Parmesan

Chicken Parmesan, mmmm…

One of our favorite Listfixxers Jennie sent us this warm and cozy chicken parm. This recipe is home-grown, so to find it, look it up on Listfixx.

To feel a little better about the breading and heaps of cheese on this dish, we serve it with brussels sprouts (and pasta, of course…) Just save a bit of the sauce, or your own marinara, to put on the pasta after baking.
